- 6 Hardboiled Eggs
- Avocado (Small-Medium size)
- 2 Tbsp Mayo
- 1 Tbsp Lime Juice
- Salt to taste
- Sliced Deli Meat Ham
- Green Food Coloring
- Toothpicks
How To Make Green Eggs And Ham
Green Eggs And Ham – Step One
Peel and cut in half the hardboiled eggs.
Scoop out the yolks and place in a medium size bowl.

Add the mayo, lime juice, salt, avocado and 1-2 drops of food colouring.

Mix and mash well.

Scoop or pipe the yolk mix into the eggs.

Take the ham and cut in half. Roll up and stick a toothpick in it.

We didn’t have Dr Seuss when growing up, so when I hear about one of the books, it’s usually the first time for me. It’s amazing that this one was written over a bet 😀 (and of course he won!) That looks like a crazy meal, but it also looks good 😀 did the recipe work and taste good?
I have done green eggs and ham a few times, but not this specific recipe. I picked it because it looks less gross in the pictures. Most of the time, to me at least, the ham looks like it is rotten if it is bright green. lol The variations I have done on this have been tasty. It is basically a deviled egg with food coloring so you cant go wrong.
